Man, have I been on some kind of an almond jag lately. I made marzipan for the first time a couple of weeks ago (so much easier than I realized). I also bought a Bakeshop almond croissant at Extracto Coffeehouse last week, and anyone who knows me knows that this is far off of my beaten pastry path. Not sure what’s happening in my head and mouth, but something in there is telling me it needs to eat almond paste.

The one I ate was the little round with rainbow sprinkles (above – I think those ones are 50¢, not $1), but I’m told that the same dough is used for the unadorned squares, pictured below. I found it at Ristretto on NE 42nd – not sure whether or not they’re sold at Ristretto’s other two locations. But I’m fairly certain that they sell at the squares (if not the sprinkly rounds) at their shop on N. Williams.

Gingersnap at Bakeshop

I have given high praise to two cookies in the past that were both purchased at Ristretto Roasters. Both the Chocolate Chocolate Nib and the Oatmeal Chocolate Chunk, were baked by Kim Boyce, author of the beautiful Good to the Grain baking book.

And now…. Boyce has her very own retail bakery!  Bakeshop opened just this past week on NE Sandy Blvd.  (Her goods will continue to be available at Ristretto – as well as Extracto Coffee House, Breken Kitchen, Case Study Coffee (adjacent to the bakery), and probably a few other joints that I don’t know about.
